This isn't really cooking. It's just an easy go to meal when you are out of time. It's pretty flexible, and can certainly be made with a taco meat of your choice instead of the beans.
Ingredients
1 can of pinto beans (could use cooked dry beans)
1 can of refried beans
1 diced tomato (I used cut yellow pear tomatoes tonight)
Shredded lettuce
Diced sweet pepper (Green, red, yellow, orange...whatever you have/like)
Diced red onion (could sub whte or yellow)
Corn chips
Taco seasoning packet
Salsa
Instructions:
Mix the pinto beans, refried beans, and taco seasoning in a 2 Qt. sauce pan and heat them for 3-5 minutes, stirring occasionally.
Fill your bowl 1/3 the way with corn chips.
Top the chips with the seasoned bean mixture.
Top the beans with lettuce, tomato, onion, peppers, and whatever else you feel like adding to it. Top with a dollop of salsa, and it's ready!
Other toppings to consider are sour cream, cheese, avacado slices or guacamole.
