Balela

Balela is a Middle Eastern relish/salad and makes a great side dish for a cook-out! It's easy to make, and can be served cold or at room temperature. Because of the oil it would be better at room temperature, but can be made ahead and pulled out of the fridge an hour before.

And interesting latin twist on this salad would be to use cilantro instead of parsley, and to use lime juice in place of the lemon juice!



Ingredients
1 can garbanzo beans, rinsed and drained
1 can black beans, rinsed and drained
1 can diced tomatoes, drained
2/3 cup chopped red onion
1/4 teaspoon garlic powder
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1/2 cup chopped parsley
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Instructions
1. Combine all ingredients; mix well. Let stand 15 to 30 minutes before serving. Serves 4.
